How To Make Fish Paste (Fish ball and Yong Tau Fu )

Today, let's share some techniques how to make fish paste. Since we start selling the mackerel flesh, many customers do ask us how to turn this to fish paste!

You can use the whole Spanish Mackerel or Mackerel Flesh to make fish paste. Below is the step by step how to make a fish paste and the simple ingredients needed: 

Main Ingredients as below:
1. 600g Spanish mackerel
2. 1 tsp salt
3. Dash of white pepper powder
4.  Water for mixing the paste

TIPS:

1. Slowly add water to reach the softness you want. Our mackerel do need to add more water ( Fresh ma ! )

Step 1:  

Get the right Mackerel, we will use Spanish mackerel ( wild catch). Size about 600g to 1kg.

 

 

Step 2: 
Gutted and remove the head. Slice side of the fish, you can keep the fish bone to make fish stock later.

Step 3: 
Mackerel flesh ready from scrapping. 

You can now start to chop the flesh evenly. If you notice any fish bones, remove it from the flesh. Slowly add water, salt, and pepper to increase it stickiness. 

 

Step 4: 

Throwing fish paste is the most challenging and fun part. Wet your hand and start throwing. Of course, you can always opt to use the machine. 

After throwing, you will notice the texture of fish paste is getting smoother.

You can use the fish paste to make fishball, young tau fu or just cook with soup.
