Fish Belly Pot with Ginger and Green Onion 薑蔥魚腩煲

Ingredients 材料:

Fish Belly 500 g
Ginger  12 slices
Green onion  2 sprig
Garlic 蒜頭 3 cloves
Shallot 乾蔥 2

 

Marinate 醃料: 

Ginger, minced 薑蓉 2 tbsp
Cornstarch 生粉 2 tbsp
Chinese cooking wine 紹興酒 1 tbsp
Light soy sauce 生抽 1 tbsp
Sugar 砂糖 1 tsp
Ground white pepper 胡椒粉 1/4 tsp

 

Seasoning ingredients 調味料:

Water  2 tbsp
Chinese cooking wine 紹興酒 1 tbsp
Oyster sauce 蠔油 1 tbsp
Dark soy sauce 老抽 1 tbsp
Sugar 砂糖 1 tsp

 

Instruction 烹饪步骤

1. Rinse, pat the grass carp belly dry and cut into pieces. Cut the green onion into sections. Slice the garlic, shallots and set aside.
将青鱼腩洗净抹干切件;葱切段;蒜头及小干葱切片备用。

2. Marinate the grass carp belly with minced ginger, Chinese cooking wine, light soy sauce, sugar and ground white pepper for 1 hour.
青鱼腩用姜末、绍兴酒、生抽、砂糖及胡椒粉腌1小时

3. Mix together oyster sauce, dark soy sauce, sugar and water for seasoning. Set aside. 将调味用的蚝油、老抽、砂糖及水拌匀备用

4. Coat the fish belly wicornstarchrch well. 青鱼腩加入生粉拌匀。

5. In a pan, add some oil on medium heat. Add grass carp belly and shallow-fry until cooked. Set aside. 用中火烧热锅,加入适量油,加入青鱼腩半煎炸至熟透备用

6. In another pan, add some oil on medium heat. Add ginger, garlic, shallots, green onion and sauté until fragrant. 用中火烧热另一个锅,加少许油,加入姜片、蒜片、小干葱及葱段炒香

7.  Add grass carp belly. Drizzle Chinese cooking wine around the pan. Cook for 3 minutes on medium low heat.  加入青鱼腩,沿锅边加入绍兴酒,用中小火煮3分钟

8 . Add seasoning sauce and mix well. Ready to serve. 加入调味酱汁炒匀,即成
