This is another interesting recipe from home cook chef Qaseh Manje Puteri ZainRose who is very passionate on cooking and beauty. Other than prawns, we love the juicy pineapple in the dish too.

- 300g king prawn - clean, de vein it and set aside. Make sure prawn is dry to avoid soggy prawn.
200 mls pure coconut milk
50 mls water
2 lemongrass - pound
2 pandan leaves - tied
1 moderate size pineapple - Cube it. I used sweet more sour less type.
Lemak Chili Api Paste
Blend all these ingredients with little bit water coarsely.
- 1/2 big onion
2 rose onion
3 cloves garlic
10 cili api / bird eye chili (I used 5 green, 5 red to get more colors. Can be adjusted as the level of spiciness you wish)
Thumb size of turmeric / 2 tsp turmeric powder
Step by step:
- In a pot, put in prawn together with blended ingredients, lemongrass and pandan leaves. With moderate heat, stir in between until no more water seen.
- Put in coconut milk and water. This part must be very careful to avoid coconut milk spoil. Must stir frequently until simmer. Season with salt. Don't forget to keep stirring.
Lastly, put in cube pineapples. stir until mix well. Keep heat for about 2 minutes. I like the pineapple texture still firm. taste and if you are satisfied it is ready to be served.
