Yam Paste Prawns Fritters

Serving: 4 - 6

Time: 1 hour 15 mins

Difficult level: intermediate

Ingredients:

  • 12 big  sea prawns, remove the shell and keep the tail
  • 3 cups oils for deep frying

Marinade the prawn:

  • 1/4 tsp salt
  • dash of pepper and sesame oil
  • 1 tsp cornstarch

Yam paste:

  • 300g yam, steam and mash
  • 15g tang mien flour
  • 100g shortening
  • 1 tsp oyster sauce
  • 1/4 tsp salt
  • 1/4 tsp sugar
  • dash of 5 spice powder
  • dash of pepper

Step by step:

  1. prepare the yam paste: combine all the yam paste ingredients and mix well. keep the yam paste in fridge for 1 hour.
  2. marinade the prawns and mix well
  3. divide the yam mixture into 12 portions and make it round shape. slightly fatten it and wrap up the prawns.
  4. heat up the oils and deep fry the yam prawns until golden brown and well cooked. 
  5. remove from the heat and drain then serve hot. 

Deep Fried Assorted Seafood with Beer Batter

Serving:  4 

Time: 30 mins

Difficult level: intermediate

Ingredient:

  • 250g fish fillet, cleaned and cut into 1cm thick
  • 250g squid, cleaned and cut into rings
  • 250g medium prawns, remove shell, keep the tails and slit back
  • 8 cups of oil for deep frying

Seasoning:

  • 1 tsp salt
  • 1/2 tsp pepper

Batter:

  • 1 1/2 cups of plain flour
  • 1 can regular beer
  • some water if necessary
  • 1/2 tsp chicken stock powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup flour, for dusting seafood

Step by step:

  1. season the fish fillet, squid and prawns with the seasonings
  2. in a big mixing bowl, mix the batter until well combined (consistency like condensed milk)
  3. heat up oil for deep frying, lightly dust the assorted seafood with the extra flour before dipping the seafood in the batter.
  4. once the oil is ready, put the seafood into the hot oil and deep fry until golden brown using medium heat. 
  5. dish and drain
  6. serve hot with chilli sauce and mayonnaise.
